Lexi

Lexi I only met with once.  She has been working at the COOP for one year and loves it there.  When I met with Lexi I actually had some Ginger-Apricot pie with me so I got her opinion on it.  She really liked the filling, though she could taste the store-bought crust... it was pretty obvious.  Anyways.  Lexi's favorite pie is an Apple Pie.  When I asked her about how they make their Apple Pies at the COOP she took me to the back and showed me what they use to peel and slice there apples.  It's actually the same exact tool I use at home!  The one that creates apple ringlets!  I was happy to see that I'm not the only one that uses one of those... though she couldn't tell me what it was called either.

Lexi also gave me a few tips on my pie baking:

Lexi said that when I'm pre-baking or fully-baking a crust I can go ahead and poke a few holes in the bottom crust to insure that air bubbles won't get trapped down there.

She also showed me one crust they had made at the COOP they had actually taken it and rolled it out in graham cracker crumbs which cave it a cool texture and taste!  I think I'm going to have to try out that whole rolling the crust out in graham crackers sometime.  It looked really cool!

The other thing Lexi did for me was get me the quiche crust recipe that they use at the COOP so that I could try it at home.  Overall it was a very productive meeting!
